Should we reveal credit card to small hotels/inns when making reservation?

We do not have choice, but to reveal credit card number, name, expiry date to someone we totally do not know, when we are booking hotels, don't we?

I was feeling a bit uncomfortable when small hotels requested for my credit card information when I was booking hotels for my europe trip.

They do not even have a website for me to enter credit card information and the information was sent by email...

What should we do? Do we have choice? Is this normal?
